Ingredients

1/4 cup each Almond, cashew nut, peanut, coconut and pumpkin seeds (cut into small pieces)

1/4 cup dates (deseeded)

1 tbsp Ghee

2 tbsp rose petals

2 tbsp honey

Cooking Instructions

Heat ghee in a karahi, add all nuts and seeds. Shallow fry them on low heat. Let it cool.

Heat 2 tbsp water in a pan, add dates and cook until it becomes soft. Mash it with a potato masher. Add all the dry fruits and pumpkin seeds. Add honey and mix. Cook it till the mixture leaves the pan. Switch off the gas stove.

Rosaa Gulkand Milk

Ingredients

2 liters milk
100 grams milk powder
100 grams sugar (as per taste)
100 grams dried desi rose petals
1 cup fresh homemade cream (malai)
1 teaspoon rose water
2 tablespoons rose syrup
1 tablespoon chopped pistachios

Cooking Instructions

1. Take a large non-stick pan; it’s better to use one for boiling milk.

Keep stirring continuously so that the milk does not stick to the bottom or overflow.

2. When the milk is half reduced, add milk powder, cream, and sugar.

Keep stirring while it boils so that it thickens evenly and does not burn.
When it becomes thick and creamy, add the dried rose petals and rose water.

Add a little rose syrup and mix well. Turn off the heat.

Let it cool completely and then refrigerate for a while.

3. Once it cools down completely, add some crushed pistachios and rose petals before serving.

4. When the mixture thickens well, garnish it with chopped pistachios.

After about 2 hours, when the mixture sets nicely, cut it into desired shapes.
